Ingredients
- 1 1/2 lbs ground beef
- 1 medium sweet pepper chopped
- 1 small onion chopped
- 1 14.5 oz can diced tomatoes, drained
- 1 1/3 c. frozen corn thawed
- 1 8 oz can tomato sauce
- 2 Tbsp chili powder
- 1/2 tsp salt
- 1 8.8 oz ready to serve brown rice
- 20 taco shells
Optional toppings
- Tomatoes
- Shredded Lettuce
- Sour Cream
Instructions
- In a large skillet cook ground beef, red peppers, and onion over medium heat until beef is cooked through and no longer pink. Drain grease.
- Mix in tomatoes, corn, tomato sauce, chili powder and salt. Bring to a boil and then add rice. Heat mixture through. Serve in taco shells and top as desired.
